WHere is a simplified interpretation of a drink found on a new menu. It's a large-volume pre-mixed that's packed with the essence associated with holiday season, making it excellent for your holiday party. Reserve the remaining syrup to use in breakfast cocktails, sweets, or to make additional servings of bikinis.
Bikini
Serves 10 guests
To make the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Drink (yields 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Put all the components inside a pot, bring to a light boil, agitating so the sugar melts. After that, take off the burner and let it to cool completely. Pour to a sealable bottle, close it and store in the refrigerator, where it will keep for around one month.
For the Batch Mix: Pour all the liquid ingredients in a large bottle, let it rest for an hour, then pass it through preferably using muslin, so it's fully clarified.
To serve: Add 85ml of the premix into a cocktail shaker filled with ice, gently stirring gently for a minute until cold. Strain into a frosted cocktail glass or equivalent, top with some cranberries and finish with a light spray with the mandarin essence above the glass.
